If you’ve ever wanted to eat a cupcake for breakfast, now is your chance. This cupcake checks all of the boxes. The coffee flavor isn’t overpowering, it’s nice and subtle. I didn’t want the flavor in these coffee cupcakes to be so strong enough to give you coffee breath all day. The cream cheese acts as the creamer you would normally add to your coffee. Delicious is an understatement when it comes to these cupcakes.

Cupcakes

  1. 1/2 cup butter, softened
  2. 2/3 cup granulated sugar
  3. 3 large eggs
  4. 2 tsp. vanilla extract
  5. 1 1/2 cups all-purpose flour
  6. 1 1/2 tsp. baking powder
  7. 1/4 tsp. salt
  8. 1/4 cup strong coffee, chilled

Frosting

  1. 8 oz. Cream Cheese, softened
  2. 1/2 cup butter, softened
  3. 3 cups powdered sugar, sifted
  4. 1 1/2 tsp. coffee extract
  5. 1 tsp. vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. In the bowl of your stand mixer combine butter and sugar until fluffy.
  3. Once fluffy mix in eggs one at a time.
  4. Mix in vanilla.
  5. In a separate bowl sift together flour, baking powder and salt.
  6. With the mixer on low add in 1/3 of the flour mixture, 1/8 cup of coffee, another 1/3 of the flour mixture, the rest of the coffee, and the rest of the flour mixture.
  7. Don’t over mix, mix until just combined.
  8. Fill 12 cupcake liners 2/3 of the way full with the batter.
  9. Bake for approximately 20 minutes or until cake springs back when touched.
  10. Allow to cool before frosting.
  11. For the frosting; In a large bowl cream together butter, cream cheese, vanilla and coffee extract.
  12. Once combined slowly mix in sifted powdered sugar.
  13. Mix until frosting is light and fluffy.
