Chicken Gnocchi Soup

A while back my husband and I were at Olive Garden and I ordered the most incredible soup there. It was their chicken gnocchi soup. It was very creamy and so rich in flavorful. My husband is not a big fan of soups but this one won him over. The next day, I was on a mission to recreate it at home. After my husband came home from work, I had a hot bowl of chicken gnocchi soup waiting for him.

I was so anxious to see how close I got to the Olive Garden version. After a few spoonfuls, he tells me he thinks it’s better than Olive Garden! It made me so happy to hear that, I just stood there beaming with joy. Later I tried the Olive Garden version just to compare with mine once more and realized that the chicken they use was actually canned. I prefer using fresh chicken because it’s healthier and tastes so much better.

Chicken Gnocchi Soup

INGREDIENTS :

  • 2 tbsp butter
  • 2 tbsp olive oil
  • 3 cloves minced garlic
  • 1-1½ lb chicken breast
  • 1 onion
  • 1½ large carrots
  • 2 sticks celery
  • 8 tbsp flour
  • 6 cups homemade chicken broth or store bought
  • ½ tsp dried thyme
  • 2 cups half & half
  • 1½ tbsp Salt
  • ½ tsp black pepper
  • 1 lb package potato gnocchi
  • 2 cups spinach

INSTRUCTIONS :

  1. In a large pot, heat olive oil and butter over medium high heat.
  2. Add in the minced garlic and stir for about 10 seconds.
  3. Add the chopped chicken to the pot and stir until fully cooked, and most of the liquid has evaporated.
  4. Dice the celery, carrot, and onion and add it to the pot. Stir until the onion becomes translucent.
  5. Add flour to the sautéed chicken and vegetables and stir for a few minutes to get rid of the raw flour taste.
  6. Then slowly pour in the chicken stock while string to avoid getting clumps of flour.
  7. Add the dried thyme to the soup and let it come to a boil.
  8. Meanwhile, cut the potato gnocchi in halves and cook according to the package. Once it’s cooked, pour the gnocchi into a colander and set aside.
  9. Pour the half and half into the soup and add the salt and pepper.
  10. If you’re using my homemade broth recipe 1½ tbsp salt should be enough.
  11. If you’re using store bought broth, you made need to start off with ½ tbsp
  12. add more according to your liking. Bring it to a boil again. I bring the soup to a boil almost every time I add an ingredient so that the flavors blend together better.
  13. Lastly, chop up some fresh spinach and add it to the soup.
  14. At this point you can add the gnocchi into the soup as well. Then bring the soup to a boil one last time.
